Loaded Potato & Leek Soup
My husband and I love making soups during the colder months. Today I made loaded potato & leek soup, because everything is better with cheese & bacon!
INGREDIENTS
1 cup butter
2 leeks sliced into thin rings
4 cups potatoes (peeled & cubed)
1 box of chicken broth (approx 900ml)
2 cups cream (I used 10%)
1 tbsp cornstarch
salt & pepper to taste
chilli flakes (optional)
TOPPINGS
3 slices bacon (cooked & crumbled)
1/2 cup Shredded Cheese (I used marble)
3 chopped green onions
sour cream
INSTRUCTIONS
Melt butter in a large pot over medium heat. Add Leeks and cook until soft, stirring occasionally, approx 15 min. Season with salt, pepper, & chilli flakes. While leeks are cooking peel and chop potatoes.
In a separate bowl mix broth & cornstarch and pour into pot. Add potatoes and turn heat up high to bring to a boil. Add more salt & pepper if necessary. Add cream and reduce heat to simmer. Simmer until potatoes are tender.
Serve individually and top with cheese, bacon, green onions, & sour cream.
